Lamb fillet with broad beans and artichoke in a tajine style

The basic ingredients are lamb and beans. Lamb is rich in iron and protein. Beans are low in fat and sugar. They contain proteins, are rich in magnesium, potassium, calcium and fibre. Both also contain vitamin C and therefore allow for better absorption of iron! ⁠
 

Ingredients

∙ 170 g of lamb⁠
∙ 40g of beans⁠
∙ 100 g of artichoke hearts⁠
∙ 1 onion⁠
∙ Olive oil ⁠
∙ Ginger⁠
∙ Mix of spices like ras el hanout⁠
∙ Saffron⁠

 

Preparation

#1 Cook separately in salted water the artichoke hearts (8 to 10') and the beans (15’)⁠
#2. Meanwhile, brown the lamb in olive oil then set it aside from the bottom of the pot⁠
#3 Brown the onion in olive oil until they are golden. Add the meat, ginger, a mix of spices and saffron.⁠
#4 Cover with water. Cook on a low heat and covered. Add the vegetables 30' before the end of cooking and season to taste.⁠
