Cauliflower couscous and pine nuts

Here is a healthy and delicious recipe to replace starches during lunch.

This recipe is also interesting as it is rich in iron (cauliflower, parsley, and pine nuts), in Vitamin C (cauliflower, parsley and garlic) which allows good assimilation of iron, in folic acid (garlic, pine nuts, cauliflower), as well as in calcium, potassium, magnesium (pine nuts).

The ingredients

- one cauliflower
- two tablespoons of olive oil
- two cloves of finely chopped garlic
- 40 gr of pine nuts 
- 110 gr of chopped fresh parsley
- pepper and salt to your liking

How to prepare in 3 minutes!

1. With a blender, crush the cauliflower until a semolina is obtained.

2. In a pan, heat the olive oil over medium heat, add the cauliflower, garlic, pine nuts, and parsley.

3. Brown while stirring frequently.

4. For a more subtle taste, add two tablespoons of walnut oil
