Lentil and chia salad with smoked salmon

Polyunsaturated fatty acids, those that come from food, particularly omega 3s, ensure the flexibility of biological membranes. Let's revisit the importance of the cell membrane. It plays a crucial role in the exchange of nutrients (regulating passages), but also in CO2, hormones, oxygen, and other elements allowing for optimal cellular activity. To function well, the plasma or cytoplasmic membrane must be flexible, even deformable.

French researchers have discovered that the presence of omega 3s makes membranes more malleable and thus much more sensitive to the action of proteins (ah, always the importance of amino acids) that deform and cut them.[…] Two grams of omega 3 per day seems to be the minimum our membranes need to stay body flexible... And keep us flexible and of sound mind! How about a little recipe rich in iron and omega 3s.

Ingredients

  • 200g of green lentils (2 full glasses)
  • 1.5 liters of water
  • 4 slices of smoked salmon
  • 1 red onion
  • 1 teaspoon of cumin
  • The juice of one lemon
  • 4 tablespoons of olive oil
  • 1/2 bunch of parsley
  • 2 tablespoons of chia seeds
  • Salt
  • Pepper

Preparation

  • Rinse the lentils in cold water and put them in a pot. Cover them with 1.5 liters of unsalted cold water. Bring to a boil and cover. Let cook like this for 25 minutes. Drain the lentils, then rinse them under cold water to stop the cooking.
  • Finally chop the onion. In a container, mix the onion with the olive oil, add the lemon juice, cumin, salt, and pepper.
  • Cut the salmon slices into small pieces.
  • Put the lentils in the sauce, add the salmon pieces and the chopped parsley. Sprinkle with the chia seeds.
  • Serve at room temperature
