Sauerkraut salad with mussels and pine nuts

Break the mold to enter the world of mussels...a meal that is ideal for lunch or dinner (after training), very quick to prepare, tasty and super healthy.

So the winning trio is: cabbage - pine - mussels; nothing better for a snack...

Why this trio?


 
#1 Pine nuts 

Pine nuts will give a crunchy side to this dish, and in addition they are rich in proteins, in fiber and good fats of mono and poly unsaturated types. They are also a good source of iron, vitamin B9, vitamin E, as well as minerals such as potassium, calcium, and magnesium, which is often deficient in many people.

 #2 Mussels

The mussel is among the most nutritionally interesting seafood, it is rich in proteins, antioxidants such as zinc, selenium, copper, manganese, and also in vitamins B3, B5, B9 and B12 in particular. This mollusk is a good source of iron and good fats of the omega 3 type.

 #3 Sauerkraut

Sauerkraut does not have the reputation it deserves; on one hand, it strengthens our defenses thanks to its good bacteria that act on our gut flora. This action is due to "lacto-fermentation", i.e. the transformation of cabbage sugar into lactic acid. This is the mechanism that categorizes it among probiotics. On the other hand, it is rich in vitamin C and it will better fix the iron from the mussels, but it also contains many good minerals such as calcium, magnesium, and potassium.

 

Ingredients (for one person)

 

125 g of raw sauerkraut
100 g of cooked and shelled mussels
1/2 onions
3 tablespoons of oil (olive or avocado)
2 3 tablespoons of white balsamic
1 tablespoon of Worcestershire sauce
1 tablespoon of pine nuts
Salt and pepper from the mill


Preparation

 

  1.     Wash the sauerkraut to make sure it is not too acidic and then let it drain in a colander
  2.     Peel and finely chop the onions
  3.     In a deep dish, mix the oil, balsamic, Worcestershire sauce, chopped onion, salt and pepper well
  4.     Then add the raw sauerkraut and the cooked and shelled mussels, mix again, sprinkle with pine nuts and serve

 
If you find that it lacks flavor, you can add your favorite dressing..
